Eggplant boats with vegetables: the favorite recipe of the late Poppy Patrick Peretz | Israel Today

The mother of the late Poppy Patrick Peretz says: "Every Friday when he came home from the army, he would come with his friends to the unit and they would enjoy the reasons for the Sabbath. And he especially loved the eggplant boat dish."


Patrick was born in Ofakim, on the 21st of Elul 5732, on August 31, 1972.

Ben Mazal and Haim Peretz, fourth child between five siblings.

Patrick enlisted in the IDF in May 1990 and served as a commander in Judea and Samaria (Judea and Samaria), in the undercover unit.

Patrick fell during his service in an operational activity in the Hebron area, during Operation Defensive Shield on April 4, 2002.

The 29-year-old was in the fall and left behind a wife and child.

He was laid to rest in the military section of the Ofakim cemetery.

Ingredients:

  • 2 medium potatoes

  • 1 egg

  • Half a bunch of parsley

  • Half a bundle of dill

  • Half a bunch of coriander

  • A quarter cup of oil

  • Chicken soup (fur)

  • A little salt

Instructions:

  • Take each eggplant and cut into two halves lengthwise.

  • Remove the eggplant flesh so that an eggplant boat remains.

  • The inside of the eggplant is cut into cubes.

  • Heat a frying pan with a little oil and fry the eggplant pieces together with the chopped onion until golden.

  • At the same time peel 2 medium potatoes, rinse them with water and mash until puree and add the onion and eggplant mixture and set aside.

  • The vegetables (coriander, dill, parsley) are thoroughly washed and chopped in a food processor or manually until pulpy.

  • Add the chopped vegetables together with the egg and spices to the potato, onion and eggplant mixture.

  • Preheat oven to 180 degrees.

  • In a pan with baking paper take each eggplant boat, brush with olive oil, add a little salt and add the stuffing.

  • Once we have filled all the boats, put the mold in the oven for 20-30 minutes (until browned).
